The cure is standard sodium nitrite/ salt cure that has been a meat processing standard for over a century. We’ve portioned it correctly so that there is no messing around with scales or measuring spoons; just add one packet of seasoning and one packet of cure to 8oz of cold water, mix throughly then blend with 5 pounds of meat. After the mixture marinates for 24-36 hours to cure the meat, it is ready to cook and enjoy. The kits work great with any method of cooking from smokers, to dehydrators and conventional ovens.
